VALENTIN BIANCHI VALENTIN BIANCHI "ENZO" 2006

This is Bianchi's top wine and is a blend of Cabernet Sauvignon, Merlot, Malbec and Petit Verdot. It has a tremendously deep colour, an intense nose of berry fruits and amazing length and complexity gained from 14 months in oak barrels.

VINEYARD
Cabernet grapes for Enzo are grown on the Asti Estate, in Las Paredes, situated 7km west of the city of San Rafael, Mendoza at 760 metres above sea level. This area is among the coolest areas
of San Rafael, with sandy calcareous soils of alluvial origin.

The Merlot and Malbec grapes come from the Doña Elsa vineyard in Rama Caída, an equally cool area with similar soils.

GRAPE VARIETIES
87% Cabernet Sauvignon, 5% Malbec, 4% Merlot, 4% Petit Verdot

VINIFICATION
The grapes were picked by hand into in small boxes, followed by careful manual sorting and de-stalking before pressing.

Cold maceration took place before fermentation started. During fermentation, the must was carefully pumped over the cap to ensure good extraction of colour and ripe tannins. The fermentation temperature did not exceed 30°C and the total maceration time was 25-30 days.

The wine was then aged in 90% new French oak and 10% new America oak for a period of 14 months. It was then aged for a further two years in bottle before release.

TASTING NOTE
This concentrated wine has tremendous depth of colour, ripe red fruit perfumes with touches of cassis, black cherry and plums on the nose, and hints of spice and black pepper.

Rich, ripe and well-structured on the palate, it has excellent depth and a long finish with flavours of chocolate, cherry, cassis and black pepper on the finish.
