VILLA TONINO NERO d'AVOLA 2005
From a classic Sicilian variety, this wine is made by a traditional Marsala producer. It offers lovely deep cherry and plum fruit along with a little bit of oak and a slightly spicy finish. Unusual and a great change from the norm.
VINEYARD
Vineyards are located in two different areas, one near Marsala and the other in Central Sicily. The grapes from the former region, normally an area regarded as being cool for Nero d'Avola, have given vibrancy and an aromatic dimension to the wine, while the latter, a hotter, drier zone, provides the colour, weight and structure.

VINIFICATION
Picking takes place when the sugar level reaches at least 20% with a total acidity of about 7 g/l and pH of 3.30/3.40. At this delicate stage, special attention is given to the polyphenolic levels. Each vineyard produces approx. 5 kg of fruit.
The vinification process starts with pressing and the separation of the stalks. The must and skins are transferred into 30,000 litre stainless steel autovinifiers and are treated with enzymes (for extracting the colour), selected yeasts (for the controlled fermentation) and with SO2. The whole process takes place under controlled temperature (23-25°C) and lasts 8-10 days.
The final product is transferred into 50,000 litre stainless steel vats for malolactic fermentation and is then matured for 7 months in used French oak barrels.
Vinification takes place under the supervision of Dr. Alberto Antonini.
TASTING NOTE
The wine shows good balance, with a deep colour, ripe, dark cherry and plum fruit, with sweetness and softness of oak overtones with a velvety texture and an attractive distinctive fruit. Spicy lasting finish.
