SHAW & SMITH ADELAIDE HILLS SAUVIGNON BLANC 2007 SHAW & SMITH ADELAIDE HILLS SAUVIGNON BLANC 2007

Shaw and Smith produce the "benchmark" Australian Sauvignon from their base in the Adelaide Hills. This wine shows all the varietial character one would expect from this grape, along with a more middle palate weight and flavour than sometimes found in antipodean Sauvignon Blanc. A great wine.


VINEYARD
Established in 1989 by Martin Shaw and Michael Hill Smith, Shaw and Smith's aim is to make contemporary, high quality wines that stand amongst the best of their type in Australia. The wines are made exclusively from grapes grown in the Adelaide Hills, predominantly from Shaw and Smith's Balhannah and Woodside vineyards plus specialised growers throughout the Hills. All fruit was hand picked to avoid fruit damage.

GRAPE VARIETIES
100% Sauvignon Blanc

VINIFICATION
The hand picked, whole bunches were destemmed, crushed, chilled, gently pressed then underwent fermentation in temperature controlled stainless steel vats. The wine does not
undergo any malolactic fermentation as they are looking to retain natural crispness and high acidity in this wine.

TASTING NOTE
The style is unoaked to enhance the fresh varietal character and overall tangy zippy flavours of the Sauvignon fruit. It has greater middle palate weight and length of flavour than the more extreme herbaceous styles. A young, refreshing wine with lively acidity and attractive varietal flavours. The benchmark for Australian Sauvignon Blanc.
