GRAPE VARIETIES
100% Zinfandel
VINIFICATION
During fermentation, the must was divided into three parts and each underwent a different kind of treatment. In 50%, the cap was regularly punched down, in 25%, the must was fermented in a rotary tank and in the remaining 25%, the must was drained off and then pumped back over the cap. This results in extraction of good colour and soft, ripe tannins. Maceration lasted ten days and was followed by maturation for 12 months in oak, of which 75% was American and 25% French.
TASTING NOTE
Ripening conditions were slightly cooler this year and this preserved the juicy acidity of the Zinfandel while allowing the grape tannins to ripen fully. Good depth of red/black colour and perfumes of cracked black pepper and spicy brambles give way to fine, ripe tannins and pure cherry fruit. Black pepper and blueberry perfumes last through to the finish.
