SAAM MOUNTAIN PINOTAGE 2006 SAAM MOUNTAIN PINOTAGE 2006

Pinotage is a great food wine and pairs with most cuisine types. This wine, from a farmer's collective in Paarl, will work well with a tender steak or spicy tomato based dishes.

VINEYARD
SAAM Mountain Vineyards encompasses a number of farms belonging to third generation family growers, each with a deep commitment to the land. The vineyards are located in sites across Ageter, Malmsbury, Swartland, Durbanville and Paarl but have historically all been certified WO Paarl.
The premium vineyards sites have been selected for their cooler climates, where the average rainfall per annum is about 500-600ml rainfall.

SAAM we are dedicated to sustainable farming and currently operate on a 1:3 vineyard to fallow land conservation ratio. All the farmers practice dryland farming - by law they could irrigate but choose not to.

GRAPE VARIETIES
100% Pinotage

VINIFICATION
Skins and juice are fermented together and mixed four times per day to ensure maximum colour and flavour is extracted. Pressing of the skins starts when the tannin fruit balance is optimal. Malolatic fermentation takes place in stainless steel tanks on different dosages of French oak staves. On completion of malolactic fermentation, the wine is racked, sulphured and the same staves added again. In total the wine spends six months on oak staves.

TASTING NOTE
A deep purple Pinotage with a typical plummy and blackberry nose. The intensity of the ripe dark fruits is well balanced with juicy tannins and hints of vanilla from French oak, giving the palate a velvety elegance.
