NYETIMBER CLASSIC CUVEÉ 2005
The wines of Nyetimber Vineyard have got to be some of (if not) the best produced in England. Their "basic" offering is the classic cuveé and this is one very serious and sought after wine, offering a patriotic alternative to Champagne, but without compromising on quality.
VINEYARD
The estate was conceived, planted and equipped exclusively for the production of top-quality sparkling wines.
Just over 14 hectares of gentle, south-facing slopes of greensand soil were planted with Chardonnay, Pinot Noir and Pinot Meunier, the classic varieties of the Champagne region.
The original estate consists of 90,000 closely-planted vines trained to single guyot, creating a unique micro-climate leading to distinctive fruit characteristics.
Several different clones and rootstocks were selected to spread the harvest period and impart an assemblage of flavours to enhance the winemaker's art.
GRAPE VARIETIES
40% Chardonnay, 30% Pinot Noir, 30% Pinot Meunier
VINIFICATION
The grapes are harvested by hand in October and gently loaded into the press, identical to those used in Champagne.
The juice is then carefully transferred into stainless steel tanks with each vineyard section kept separate.
The must is then fermented in an average of 12 days resulting in base wines. These base wines are carefully evaluated by rigorous tasting trials to decide on the blends.
After blending the base wines they are put into the bottles with yeast to go through a second fermentation in the bottle. The sparkling wine is tasted regularly to evaluate when it has aged sufficiently to give complexity and finesse. The minimum time for this to take place at Nyetimber is 5 years but sometimes it can be even longer. Once the sparkling wine is ready it is carefully riddled and disgorged. Further bottle ageing takes place before shipping.
TASTING NOTE
Appearance - pale lemon yellow, persistent fine beaded mousse
Nose - very expressive aromas. Honey, hazelnut, almond, marmalade, biscuity with lemon, floral and subtle toasty notes underneath. A lovely fresh and appealing wine.
Palate - medium to full bodied, with mature honey and toast aromas, plus lime undertones. Attractive mouthfeel with rich and yet delicate mousse that progresses nicely towards mineral and slate-like flavourson the finish. Good balance, intensity, length and complexity all point towards a promising future
