This wine begs comparison to the Grosset Springvale Riesling and certainly holds its own in that company, which is praise indeed! ONLY AVAILABLE IN UNSPLIT CASES OF 12 VINEYARD The 26-year-old low yielding Watervale vineyards are east facing, with a mixture of red loam, loamy/clay and marl soils. The fruit comes from a single, unirrigated, hand-pruned vineyard. These Riesling vines were originally two wire trained (the majority of Clare Valley producers still use the traditional two-wire training system). Stephanie however chose to change the training system so that the canopies are now trained upwards, with foliage wires and vertical shoot positioning. GRAPE VARIETIES 100% Riesling VINIFICATION The grapes were crushed and de-stemmed and the must fermented in stainless steel tanks at 14-16 C over a 2-3 week period. The juice was inoculated with a mixture of champagne and other neutral yeasts and fermented to dryness. No malolactic fermentation occurred. The use of sulphur dioxide was kept to a minimum. The wine was clarified before bottling. TASTING NOTE Beautifully lifted aroma of orange blossom, lemon and pineapple. Once again bright and cheery, crisp and oh so whistle clean, with steely, juicy citrus fruits over a mineral-like acid frame.
