MITOLO SAVITAR McLAREN VALE SHIRAZ 2007
Mitolo is a "virtual" winery established in 1999 by Frank and Simone Mitolo. Their vision is to create individual, handcrafted premium wines built on passion and an uncompromising commitment to quality. Winemaker, Ben Glaetzer became a partner in the business in 2001. Savitar is their flagship wine and provides a great example of what McLaren Vale Shiraz can
really
be about!

VINEYARD
The grapes come from the Willunga district of McLaren Vale, where the heavy grey loam soils over sandstone, intermixed with black Biscay clay, combined with the maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins.
A dry winter was followed by heavy rains in spring and a mild, early summer. High temperatures in summer caused some vine stress in late summer and the winemakers noted that crops were 20-30% lower than 2005.
GRAPE VARIETIES
100% Shiraz
VINIFICATION
Savitar was fermented on skins for fifteen days at 28-32ºC to soften the skins and release the juice. A slightly longer period on skins ensured a tighter overall structure. Only the best barrels are selected for the final Savitar blend.
After pressing, the wine underwent partial barrel fermentation followed by natural malolactic fermentation before racking.
TASTING NOTES
Opaque black showing aromas of camphor and cassis mixed with cracked pepper, truffles and earth. Rich layered mouthfeel, full bodied and rich whilst maintaining balance and precision.
