'JESTER'
SANGIOVESE ROSÉ 2007
This is a well structured, "serious" rosé wine, offering crisp, fresh berries on the nose and palate, along with a structure so often missing in pink wines. One for the grown ups!
VINEYARD
The vineyards are in the Willunga district in the southern end of McLaren Vale. The heavy grey loam oils over sandstone, intermixed with black Biscay clay, combined with a maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins.
The 2007 harvest commenced 6 weeks early. The major seasonal influence on the 2007 crop was the severe drought conditions experienced across much of the country, however an episode of rain in mid-January improved the situation for many growers by refreshing the vines.
GRAPE VARIETIES
100% Sangiovese
VINIFICATION
A combination of whole berry and low fermentation temperatures contribute a lifted bouquet. The juice is left on skins for 3 days, then using free run only, drained off and fermentation occurs at low temperatures for 3 weeks. The wine is then cold stabilised and filtered before bottling.
TASTING NOTE
Vibrant Rosé with purple hues. Crisp berry fruits on the nose, fresh and lively. The palate is rich yet refined. The wine is completely dry yet shows softness and richness from Sangiovese.
