They over deliver on bright and lifted fruit on the nose and an almost explosive fruit hit on the palate which make them highly appealing wines. The "Jester" Shiraz really packs a whole load of flavour. ONLY AVAILABLE IN AN UNSLPLIT CASE OF SIX VINEYARD The grapes come from the Willunga district of McLaren Vale, where there are heavy grey loam soils over sandstone, intermixed with black Biscay clay. These soils combined with the maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Yields are around 4 tons an acre. A thirteen day heat wave in late January and early February saw the 2009 Vintage begin in first week of February. Cool, dry conditions during berry ripening in most of the district were conducive to excellent flavour, colour and phenolic development. In general, the timing of the heatwave affected vineyards with lighter canopies and crop loads and those on thin or highly reflective soils and crops in the earlier ripening areas. GRAPE VARIETIES 100% Shiraz VINIFICATION The fruit was fermented on its skins for 5 / 6 days. The wine was pressed and underwent partial barrel fermentation. A natural malolactic fermentation was completed before the wine was racked. The wine was aged in 2-4 year old French barrels for 9 months. TASTING NOTE The Mitolo Jester Shiraz 2009 displays abundant perfumes and flavours of liquorice, blackberry and dark fruits. It has exceptional balance, refinement and generosity of flavour.
