MITOLO JESTER CABERNET SAUVIGNON 2010 MITOLO JESTER CABERNET SAUVIGNON 2010

This wine, made by the hugely talented Ben Glaetzer, is a very special and unique wine. This McLaren Vale Cabernet has a vibrant brick red colour with purple hues and a nose of nutmeg, crushed leaves and tar. The palate is blackcurrant and cassis, rich and full-bodied. Some of the grapes were left to raisin slightly, which adds interesting notes of espresso and chocolate.

VINEYARDS
The grapes come from the Willunga district of McLaren Vale, where there are heavy grey loam soils over sandstone, intermixed with black Biscay clay. These soils combined with the maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Yield is around 4 tons an acre.

GRAPE VARIETIES
88% Cabernet Sauvignon, 11% Shiraz, 1% Sangiovese

VINIFICATION
20% of the grapes were left to dry on the 10kg drying racks for 6 weeks and 5 days in the traditional Amarone manner to concentrate flavour. The must was then fermented on the skins for 6 days at a cool temperature to enhance the pure berry fruit. The wine was then pressed and underwent partial barrel fermentation. Malolactic fermentation occurred naturally before the wine was racked into 2-4 year old French oak where it remained for 9 months.

TASTING NOTES
Dense purple in colour. Masses of blueberries, cassis and leather on the nose with intense aromas of coffee and mocha. Spicy lifted and pure, the 2010 vintage has a 20% .Amarone component which adds juicy savoury tannins, richness and elongated length.
