ROSÉ DE LA CHEVALIÈRE 2007 - LAROCHE ROSÉ DE LA CHEVALIÈRE 2007 - LAROCHE

Michel Laroche is the king of Chablis, but he has also championed the potential of the South of France for well over a decade. This hugely attractive rosé has aromas of raspberry and cherry, with a lovely red fruit palate balanced by crisp acidity. Great summertime drinking.

VINEYARD
The Merlot was sourced from vineyards around Carcassonne and Cevennes, which also provided the Syrah. The Grenache was grown near Beziers. The general climatic conditions in 2007were favourable with well regulated sugar levels avoiding any difficulties with maturity. Hence, the harvest yielded very healthy fruit.

GRAPE VARIETIES
Merlot, Syrah and Grenache

VINIFICATION
The grapes were harvested in the first half of September. Whole bunches were pressed at source in pneumatic presses, before 24 hours settling at 12-15oC. The grapes spent 10 hours on their skins to add colour and flavour to the juice. Temperature controlled fermentation took place over 2-3 weeks at a cool 12-17oC in stainless steel tanks. Malolactic fermentation was suppressed to retain a fresh bite of acidity and the wine rested for 3 months in stainless steel vats before fining with bentonite and bottling.

TASTING NOTE
A gentle, dry rosé with subtle raspberry and cherry aromas. The palate is bright and fresh with the fruit balanced perfectly by the crisp acidity in the finish. An impressive, restrained wine with real character.
