CHABLIS 2006 - LAROCHE
This is a classic, well made entry level Chablis, showing a very typical character of apples, balanced acidity and stong minerality. It comes from Mr. Chablis himself, Michel Laroche.
VINEYARD
The grapes are grown in the Chablis region of Northern France, close to Auxerre. Laroche uses long term supply contracts with the best local growers.
The grapes were harvested in late September and early October.
GRAPE VARIETIES
100% Chardonnay
VINIFICATION
Pressing of the grapes took place at the property of origin under the supervison of Laroche: whole bunches in a pneumatic press, then 12 hours settling at 12 to 15°C.
Fermentation then took place using selected yeasts for 20 days at 16 to 17°C in stainless steel tanks, followed by 100% malolactic.
The wine was then matured for 6 months on lees in stainless steel, before being Bentonite fined and bottled on a low pressure bottling line with minimum filtration to preserve the maximum natural character of the wine.
TASTING NOTE
This wine is very typical of a good quality Chablis, showing crystal clear appearance with hints of gold. The nose is clean with a subtle hint of apples and undergrowth and the palate is vigorous, again very typical of Chablis with good minerality.
