The Yarra Valley excels at Pinot Noir with its cool climate and this example from Innocent Bystander is vibrant and fruity. It is a long, lean and savoury wine with an aroma you could die for...!







VINEYARD
Fruit was selected from five different vineyards, two in Port Philip, Quarry Ridge and Little Cathedral, with the other three located in the Yarra Valley, Arthur's Creek, Slatey Creek and Lone Star Creek.

These vineyards were chosen in particular for their high diurnal temperature range, resulting in wines with high natural acidity and low pH. All fruit was hand harvested.

GRAPE VARIETIES
100% Pinot Noir

VINIFICATION
Fruit was destemmed but not crushed to open top fermenters. A three to seven day cold soak at eight degrees was followed by fermentation with mainly indigenous yeast strains. Ferments were gently hand plunged (one to two times a day) to preserve aromatics and delicacy. Peak temperature was 30°C.

The wine was aged in a mixture of French oak and stainless steel.

TASTING NOTE
Aromas of dark cherries, cranberry juice, fresh raspberry, nutmeg, cinnamon, truffles with underlying wet earth and mushroom character. On the palate it is juicy with succulent fresh berry character, good acidity and a rich finish.
