CARIGNAN 2004
Using the Southern French variety Carignan, this wine shows lovely complexity, rich, ripe blackfruit and an attractive spiciness. Very different and a great match for hearty, warming food.
VINEYARD
Fairview is situated on the lower slopes of Mt. Paarl, which is more sheltered from the moderating maritime influence than nearby Stellenbosch.
Carignan was picked ripe from the Basson's vineyards in the Perdeberg area. This 25 year old vineyard receives drip irrigation, which assists through the hot dry summers. The vineyard grows on
Malmesbury shale soils, contributing to the complexity of the wine.
There is very little Carignan grown in South Africa. Fairview are very excited by the quality of the grapes which they accidentally found whilst looking for old vine Pinotage. The yields of the vineyard in
2004 was 6.29 tons per hectare, and
GRAPE VARIETIES
100% Shiraz
VINIFICATION
Grapes were destalked and lightly crushed. Rhone yeasts were used for fermentation, which took place in stainless steel. The grapes were cold soaked for three days at 18 degrees, and pumping-over was performed three times a day during fermentation. The tank was gradually allowed to warm as the wine fermented dry.
Malolactic fermentation was completed in tank when the wine was transferred directly to barrels after malolactic was completed. The wine spent 10 months in a mix of used French and American
oak barrels.
TASTING NOTE
The wine is a vibrant deep crimson red colour with a nose of dark, spicy aromas, with cloves, nutmeg and some liquorice. The palate shows ripe black currants and black cherries with a rich medium body, with firm tannins, and a long finish.
