South Africa is gaining a reputation for top quality Shiraz and this wine shows why. Showing great structure and a very balanced palate of intense and spicy fruits, this wine is savoury, rich and structured. Fantastic value!
VINEYARD
Fairview is situated on the lower slopes of Mt. Paarl, which is more sheltered from the moderating maritime influence than nearby Stellenbosch.
34 ° South and 19 ° East marks the site of a most unique vineyard. The Surveyor General's trigonometric beacon rises from the top of a mound of metamorphic stone which was formed many millions of years ago. In primordial times, the area was an ancient ocean bed. Now, un-irrigated bush vines claw their way between large flat grey shale stones. Their roots penetrate the rock in search of nutrients and moisture. The vines are pruned for low yields, with the Glenrosa soils naturally encouraging the production of small berries.
GRAPE VARIETIES
100% Shiraz
VINIFICATION
Grapes were harvested fully ripe at 26ºBeaumé. The fruit was destalked and lightly crushed.
The must was then chilled and cold soaked for two days. Fermentation took place in open 500 litre new French oak barrels, during which manual punch downs were conducted three times daily. Post fermentation maceration lasted six days, after which the wine was pressed and malolactic fermentation completed in barrel. The wine was then returned to 40% new French oak, with the remainder in used French oak barrels. The wine spent a total of 16 months in oak.
TASTING NOTE
The 2004 vintage was again a warm vintage yielding ripe full flavoured wines. Wines from this vintage show a slightly silkier tannin structure than those of previous vintages, with the wines being more accessible within the first 2-3 years. However, this wine has a Hugely concentrated savoury palate with intense spicy fruit and good balance. Very rich and structured.
The wine is amongst the most complex and interesting expressions of Shiraz in the Cape.
