DOMAINE DE TRIENNES LES AURELIENS 2007
In the late 1980's Jacques Seysses, founder of Domaine Dujac, and Aubert de Villaine, co-owner of Domaine de la Romanée-Conti, started looking for a vineyard in the south of France. They were driven by the conviction that some great wines could be produced in the Var, an area typically known for its rosés and thin table wines. The result was Domaine the Triennes.
VINEYARD
Domaine de Triennes vineyard is a south-facing slope at an altitude of 400 metres, which shows evidence of having been planted with vines since Roman times. The clay and limestone soil is varied and perfectly suited to viticulture.
The pruning system is Cordon de Royat, which discourages excess vigor, except for the Viognier, which is pruned in Guyot. Ground cover is planted between every two rows, further controlling vigor, reducing surface water, and fixing organic matter into the soil. The aim is to strengthen and refine the style of the wines, wines which combine ripe fruit and warmth with elegance and depth.
The vineyard is run in a similar manner to Dujac's, reasoned and integrated protection: neither insecticides nor acaricides are used; treatments are only done if necessary, they are not systematic. Prevention is achieved through cultural methods rather than chemical methods as far as possible
The ground has been cover-cropped which experience at Dujac suggests has several advantages: the cover-crops act as a sponge after a rain, absorbing excess moisture from the soil, controlling erosion and helping to ensure a natural balance in the biological activity of the soil.
GRAPE VARIETIES
50% Cabernet Sauvignon, 50% Syrah
VINIFICATION
The grapes underwent a 25-to-35-day-long fermentation on natural yeasts in tanks to help tannins polymerize, making them smoother. Regular
remontage
and even
délestage
(wine is run out of the tank into another, and then pumped over the cap of grape skins) ensure the wine received wine adequate aeration.
The wine was then aged for twelve months in old Dujac oak before being blended in tanks and bottled unfiltered after un-fined.
TASTING NOTE
A blend of Cabernet Sauvignon and Syrah, this is a robust wine with plenty of red fruits character and a toasty finish. This is an excellent food wine. It will pair particularly well with Méditerranean food.
