Jacques Carillon is a quiet, reserved and thoughtful winemaker who has built upon the experience of his father Louis and has further improved the quality since taking full control of the estate in the mid nineties. VINEYARD Carillon grows Chardonnay on 5.5 ha of land in Pulingy and the family can trace its roots in the area back to 1632. This domaine produces some of the most impressive wines in the village. The domaine practices low yields through bud thinning and green harvesting and judicious canopy thinning where necessary. Spraying is kept to a minimum and no weed killers are employed and the rows between the vines are ploughed. GRAPE VARIEITIES 100% Chardonnay VINIFICATION The wines are manually harvested and then undergo a classic vinification. The wines are barrel fermented and barrel aged on the fine lees for a year. There is a small percentage of new oak used and, in fact, some of the Village wine is aged in larger foudres rather than small barrels. Bâtonnage is practiced during the maturation process. The wines are assembled in stainless steel prior to bottling which usually occurs in early spring approximately 18 months after harvest. TASTING NOTE An exceptionally fresh nose that is at once ripe and elegant leads to delicious, intense and beautifully intense flavors blessed with ample mid-palate fat that buffers the firm acid spine, all wrapped in a toast and citrus-infused finish.
