It has all the classic green fruit, minerally undertones and that famous Chablis "zip"! And best of all, and in keeping with the "proper" style of Chablis (in my humble...), it's unoaked. Hooorah! VINEYARD Saint Martin refers to the patron saint of Chablis, whose relics were kept in the domaine's ancient monastery for many years. Domaine Laroche owns 63 hectares of Chablis vineyard on the famous Kimmeridgian soil that gives the wines such precision. Each plot has a different exposure, soil depth and vine age which contributes complexity to the wine, and means that every parcel ripens at a different time. GRAPE VARIETIES 100% Chardonnay VINIFICATION A favourable and dry spring was followed by a summer mitigated by the generous and convenient ripening period in September. The grape harvest took place successfully in the second half of the month. Very healthy, well balanced and rich grapes resulted in lively and fresh aromas. Harvest lasted from 15th to 30th September. The grapes were pressed and settled at low temperatures for 12 hours in wide tanks, to aid sedimentation and minimise the need for sulphur dioxide. The fermentation lasted 14 days at 17°C, followed by full malolactic fermentation. Bentonite was used to fine the wine before eight months ageing on the fine lees. Filtration was light in order to preserve the natural body of the wine. TASTING NOTE The Domaine Laroche St-Martin Chablis 2010 is pale gold in colour with intense aromas of ripe white fruits and spring blossom. Ripe fruit flavours are balanced by zesty acidity on the lingering, fruity finish.
