CHÂTEAU LAVILLE SAUTERNES 2005
This wine has been winning plaudits for the past few years for its richness and intensity, but also its lovely freshness on the palate. The wine has all the classic flavours of apricot, marmalade and almonds one would expect from a top quality Sauternes, along with the capability to last two decades at least.
VINEYARD
Château Laville owns 14 hectares of vineyard in Sauternes on gravel soils underpinned with limestone.
A combination of these soils and the humid site means that this is the perfect place for
botrytis
(also known as 'noble rot') which shrivels the grapes concentrating the natural sweetness of thegrapes whilst adding a delicate orange like flavour to the wine.
GRAPE VARIEITIES
85% Semillon, 13% Sauvignon Blanc, 2% Muscadelle
VINIFICATION
During the harvest, the pickers will pass through the vineyard between three and six times to ensure only those grapes that have been affected by
botrytis
are selected.
Fermentation takes place in stainless steel at 20 to 22 oC before the wine is aged for 18 months in 400 litre
barriques
, only 50% of which are new to ensure that the wine is not overpowered by oak. The wine is then aged for a further 10 months in tank prior to bottling.
TASTING NOTE
The wine is clear and sharp with a deep golden colour
It has an intensely perfumed nose with all the aromas associated with botrytised wines, including marmalade and dried apricots.
On the palate, it is rich and sweet, with more apricot flavours and a clean, refreshing finish which balances the sweetness.
