CHAMPAGNE DOM PERIGNON 1999 CHAMPAGNE DOM PERIGNON 1999

One of the Kings of Champagne and can certainly be one of the best of all. It does need some time in bottle and therefore this 1999 is just starting to drink, but has the potential to last for many years to come. It develops into a magnificantly toasty, fuity and concentrated wine.


VINEYARDS
Dom Perignon always selects it's grapes from the same (Grand, Premier Cru and lieux-dit) vineyards every year, and therefore they can manage the quality of the grapes very closely. All the vineyards are owned by Moet et Chandon.

GRAPE VARIETIES
55% Chardonnay and 45% Pinot Noir. The more robust Pinot Meunier is never used in Dom Perignon.

VINIFCATION
Dom Perignon is a vintage Champagne and is therefore produced in only the finest years. The base wines from each of the vineyards will be vinified seperately and then (very) carefully blended by the chef de cave to prodcue a seamless, balanced and very fine champagne. The sparkle is produced by the traditional method - i.e. second fermentation in the bottle and then the wine was aged on its lees for at 6 years before disgorgement and shipping.

TASTING NOTE
As usual with DP, this wine has a very complex nose of honey and fresh almonds. The palate continues with complexity showing acidic freshness and a very fine mousse. The fruity flavours of very ripe stone fruit and dried apricots give way to a long finish with distinct toasted brioche notes.
