CHAMPAGNE MATHIEU BRUT TRADITION NV
This wine comes from the Côte des Bars and it unusual for a "standard" NV Champagne in that it is made from 100% Pinot Noir. A rich and toasty wine with good depth and length it offers superb value for money.
VINEYARD
The Serge Mathieu estate is in Avirey-Lingey in the heart of the Côte des Bars and he owns 12 hectares mainly of Pinot Noir (80%) and some Chardonnay (20%). The vines have an average age of 23 years. They work hard to develop the vineyards and grow the best grapes possible, using techniques such as cover crops and careful cultivation to maintain the vineyard balance. The quality of the fruit certainly shows through in the wines.
GRAPE VARIETIES
100% Pinot Noir - Blanc de Noirs
VINIFICATION
The grapes are manually harvested in 50 kg, free-draining boxes to minimise damage and maintain the whole bunches. The grapes are then carefully pressed, plot by plot, using a pneumatic press. There is no cold maceration. Fermentation then takes place under temperature control after which the wine is allowed to go through complete malolactic fermentation.
The still wines are aged in a combination of stainless-steel and enamel tanks. The wines are then bottled, go through the second fermentation and allowed to age on lees for four years.
The ripeness and quality of the fruit means that each cuvée requires minimal levels of dosage, allowing the fruit flavours to show to their best. The dosage for this wine is 7.89 g/l compared with a typical 12 g/l in Champagne.
TASTING NOTE
Tradition Brut is a Blanc de Noirs, which means that it is made entirely from black grapes, in this case 100% pinot noir. It shows all the fruit qualities of this grape, fine and full-bodied, crisp and with good length.
