CA' DEL SOLO SANGIOVESE 2005
This wine is made in Gimelli Vineyard in San Benito County by the slightly eccentric Randall Grahm, who has led the charge in bringing Italian and Spanish varieties to Califronia. This wine is made from the Chianti grape, Sangiovese.

VINEYARD
The Gimelli Vineyard is on the east side of the Gabilan Range in the Cienega Valley of San Benito County, just over the range from Ca' del Solo Vineyard. Unlike CDS which sits on an alluvial fan, Gimell is nestled within a box canyon and shielded from the prevailing winds. It is not quite a classically "heat trap" exposition, though the meso-climate is a bit warmer than CDS. It is nonetheless considered a Cool Climate, Region II vineyard. Fog is a frequent morning visitor.
There are numerous soil series present throughout the vineyard which require flexible viticultural practices in the various blocks. One block of very well-draining sandy loam with a good deal of decomposed granite shows very low fertility, naturally resulting in very small clusters of small berries. An adjacent section has a good deal more clay, more fertility, and consequently, produces more vigorous vines. Crop thinning is much more severe in this area. There is also a small, steeper, shy-yielding hillside section, high in iron and benefiting from a good deal of limestone. These three areas disproportionally contribute concentration/structure, high-toned fruit, and subtle aromatics respectively.
The Gimelli Vineyard instituted biodynamical viticultural practices in early 2005 and was the first of Bonny Doon's growers to utilize a flow form to stir the biodynamic preparations.
GRAPE VARIETIES
90% Sangiovese, 5% Nero d'Avola, 3% Cinsault, 2% Colorino
VINIFICATION
The fruit was handpicked into half-ton picking bins and 100% destemmed and placed into 10-ton open top fermenters. A cold soak occurred for two to three days before yeast inoculation.
During fermentation, the tanks are punched down 3 times in a 24 hour period and given one
delestage
per day. After the fermentation has finished, the maceration was extended for up to two weeks.
TASTING NOTE
This wine displays all the characteristics one would expect from Chianti, combining morello cherry stone and tea leaf notes on the nose. The restrained medium/light body shows a delicious red berry & savoury character, finishing dry and elegant. Drinking now till 2010 with every type of antipasti or Tuscan dish.
