BOISSET BOURGOGNE PINOT NOIR 2006 BOISSET BOURGOGNE PINOT NOIR 2006

This wine is a 'generic' Bourgogne Pinot Noir, but the grapes were extensively sourced within the Côte d'Or vineyards making this an excellent value wine for the quality. It displays a lovely ripe fruit on the nose and delicate black cherry flavour, with subtle oak character.

VINEYARD
This wine comes from old vines in the Côte de Nuits. The vineyard management here is stringent and uses specific techniques to control yields such as drastic de-budding, cluster thinning if necessary, soil work, little or no use of fertiliser, and environmentally friendly vine protection. Pinot Noir owes its success to the soil and temperate, relatively dry climate of Burgundy, where it is the only variety used in practically all red wines.

GRAPE VARIETIES
100% Pinot Noir

VINIFICATION
For reds, the winemaker de-stemmed the grapes completely and then tipped them into open wooden foudres. No yeasts, enzymes or tannins were added. The cold soak (at about 13°C) lasted 5-6 days. He didn't plunge during this first week, as he thinks only bitter tannins are extracted at this stage. Once fermentation started, the cap was plunged by foot. Maceration lasted for about three weeks. The wine was matured in barrel for twelve months (20% new oak) and lightly filtered before bottling.

TASTING NOTE
Dark red colour with deep purple reflections, ripe fruit notes on the nose and good balanced palate with subtle tannins.
