Balnaves are recognised as one of the leading producers of Cabernet in Australia. This wine is a benchmark Coonawarra Cabernet Sauvignon, showing all the depth, richness, complexity and well integrated oak that one would expect in a wine of this quality.




VINEYARD
Balnaves' 35 hectares of Cabernet Sauvignon vineyards are split up into sub blocks (some only 1 hectare in area), on the basis of soil type, clone variation, trellis type etc. This enables Balnaves to program different treatments for these smaller areas. Supplementary water can be supplied using a central computer system, but at least one third of the vineyard has not been watered for five years. The vines are trained on a single wire.

The Cabernet grapes for this wine were grown in the Walker, Dead Morris and Avery blocks.

GRAPE VARIETIES
100% Cabernet Sauvignon

VINIFICATION
During fermentation, 44% of the must was barrel fermented, while 23% had an extended maceration. The wine spent 20 months in 100% French oak, in a mixture of hogsheads and barriques. 67% of the oak was new and 33% one year old. The barrels were made by Saury, St Martin, Remond, Seguin Moreau and Taransaud. It was fined and bottled in March 2007 under procork.

TASTING NOTE
The hot, dry 2005 vintage produced deep coloured, intense wines with plenty of ripe tannins. Red/black in colour, the nose is intense, with aromas of dark fruit, ripe blackcurrant, tar, spice and leather, with subtle vanillin oak. On the palate, the wine is powerful and long with firm tannins and balanced fruit. Similar in style to 1982 and 1998 vintages
