GIOVANNI ALLEGRINI RECIOTO CLASSICO 2004
Recioto is similar to Amarone in that it is made by drying grapes on straw mats to concentrate the sugars and flavours. The difference comes when the wine is fermented; recioto is a sweet wine showing attractive cherry, dark fruits and some spice. Very different and an excellent example.
VINEYARD
The southeast facing vineyards are situated in the hills of the Valpolicella Classico region and are 240m above sea level where the soils are mostly calcareous and cretaceous. Pergola Trentina trained vines with about 3000 vines per hectare. The average age of the vines is 26 years and the yield is 25 Hl/Ha.
The grapes are dried at
'Terre di Fumane'
, in the state of the art drying centre, where humidity and temperature are carefully controlled. By drying the grapes under these conditions, the development of botrytis is avoided, and the integrity of the fruit is preserved. The resulting Recioto is clean, pure and modern in style.of the fruit is preserved.
GRAPE VARIETIES
75% Corvina Veronese, 20% Rondinella, 5% Molinara
VINIFICATION
The grapes were hand-harvested, then dried naturally for 5 months at the
'Terre di Fumane'
. During the drying period, 50% of the original weight of the grapes was lost. Vinification commenced with the de-stalking and crushing of the grapes which were then fermented at 15-24ºC. Maceration lasted for 25 days with daily pumping over. The wine was racked into small French oak
'barriques'
, where it remained for 14 months until bottling. The wine was then matured in bottle for a further 12 months.
TASTING NOTE
Good depth of ruby red colour, with perfumes of dried cherries and a touch of spice from the oak ageing. On the palate the wine is sweet, but not cloying, with good intensity of dark, almost fruit cake flavours and remarkable power. Excellent length, with perfumes of spiced, dried cherries on the finish.
